just had a really easy tasty lunch...lots of fat, but not many carbs.
Slice the mushrooms and fry in oil/ butter 'til the liquid has evaporated. Dollop in some double cream - I use half a small pot per person. Season and leave to heat gently while you make your slice of toast. Put mushrooms on toast and add little nuggets of soft spreadable goats cheese.

That sounds gorgeous! As I'm the only one in the household that eats mushrooms, we don't get them very often.:(

That sounds lovely, @pottersusan - I often have mushrooms on toast, but hadn't thought of a dollop of cream & some goat's cheese! Ooooh, slurp slurp yum....🙂
 
Ever tried them with pesto? Cook in the same way but with a dollop of pesto instead of the double cream (although I guess you could actually use both...)

Mark - our (big) Tesco still sell em loose so if you want 2 or a pound - you just get what you need - no waste.

Also lovely raw, too!

Absolutely gorgeous!

Try pesto, bit of cream or crime fraiche and shavings of gran pecorino....it's heaven on a slice of toast. Also makes a very nice wrap, if use a wholemeal tortilla instead of one of those giant sized wraps it's lovely.

My second favourite is mushroom with garlic and herb cream cheese with a sprinkling of smoked paprika and a snit of lemon juice.....yum! They both work well in omelettes or frittata too. I want one for my lunch now!
 
I make baby pasta shells with mushrooms, peas, cream frais lemon ,mint, Parmesan and sometimes chopped up turkey rashers. Easy peasy and delicious. Light on pasta and peas hide in the shells
