Mushroom baked eggs

Relationship to Diabetes
Type 1
Large mushroom, stalk removed and chopped
oil, garlic, thyme
tomato
Heat oven to gas mark 6 (sorry, don't do leccy)
brush mushroom with oil and garlic
place bottom up into greased dish, season
top with chopped stalks and thyme
cover with foil and bake for 20 mins
remove foil, break egg into mushroom and put tomato halves into dish, season
return to oven for 10 - 12 mins til egg set, but yolk still runny.

Carbs - not a lot🙂

Hi you say you eat mushrooms can you tell me how you cook them. Also do they spike blood glucose I want to start and eat more thank you
I fry them, add cream. Plonk on toast with some goats cheese on top. ( I suppose I should have said 'arrange' rather than plonk:D)

ps mushrooms are very low carb so shouldn't cause spikes... but we're all different🙂

Hi. I fry mine in butter with a little oil to stop the butter burning add a dash or two of Worcestershire sauce, yum. Goes well with a fry up or a roast dinner.
They are very low carb.

I haven't had mushrooms on toast for a very long time, I will rectify that soon. Thanks for reminding me.
 
Was wondering what to eat for a snack. Great idea! Fried mushroom with cheese on top, placed on some toast! Sounds appetizing for a hungry soul..!
