I ignored the instruction not to test and within a couple of weeks had soon worked out what my body could and could not take. Now I just test for new foods, avoid pasta and rice, and have the occasional small slice of bread or a couple of new potatoes. As you are only just in the diabetic range a reduction in the carbs should soon bring your blood glucose levels down. I experimented between 50gm and 130gm carbs a day and settled on 90gm, which suits me.
The HbA1c measures your blood glucose over about a 3 month period. The prick test measures at that particular moment in time. What the NHS considers healthy eating is not necessarily true for Type 2 diabetics, being too carb heavy.
