Mince Pies

so when do you want your taste tester(me) to arrive

What have you done for the mince?

I do like a mince pie, but just get regular ones and offset with dog walk, prebolus, or questionable hypo treatment!

Yes made an almond flour pastry and made my own mincemeat, dried cranberries, grated apple , some chopped apricots and dates and a generous dash of brandy.
 
keep coming back to that piccy and thinking on xmas day shall i have just one mincepie for tea
 
Bought a pack of all butter pastry ones today - regretted it for a moment when I saw the amount of sugar sprinkled over them (and 35g carbs per pie) but you've got to have a treat every now and again!

I have a secret plan for the mince pies. Invite the neighbours round for a few drinks and and snacks and hope they eat most of them with the damson & honey vodkas. I will be good and fill up on cheese, olives, bacon bites and carrot sticks. Might have room for one mince pie afterwards :D

I had one at a cafe half way round a dog walk today. It had a frangipan top and was fabulous.

And then I had the second half of the dog walk to supercharge my insulin dose, so I escaped pretty much Scot-free!

I still have some left Gail but you will have to be quick. :D My mince pie plan backfired when one of our friends bought a dozen with him. How thoughtful 😱:rofl: I did share them round and a good evening was had by all.
 
they all look lovely, Ive had two so far in the last week with no problems will have one tomorrow without fail
 
As I have Type 1, I manage my diabetes with insulin, not diet.
Therefore, I don’t limit my mince pies any more than I did before I had diabetes and I don’t my not change the recipe.
They are always pretty high in carbs but the fat in the ones with more buttery pastry always stops my body absorbing the carbs too fast and cause a massive spike.
As usual, we have been doing a mince pie taste test. Morrisons deep filled ones from the bakery won this year although Lidl wasn’t far behind.

Some years we make our own. I have made my own mince meat where I use mashed banana to hold it together and ensure they are vegetarian. But when I have less time, a buy a jar and add extra flaked almonds and glacé cherries to bulk out the mush.
Pastry is either standard short crust or short crust with water replaced with orange juice.

This year, my Christmas baking had more of a biscuit vibe with “panettone style” cookies and cranberry and pistachio biscotti.
 
Ive resisted mince pies but i was in aldi this morning and just had to buy a xmas cake

Dont care what anyone says.....im going to stuff my face and eat it all

In all seriousness i figured it was a way of having a xmas treat without going mad

I made some mince pies from one of Michael Moseley's online recipes and they fell apart:rofl:. Mince pie pud anyone! People did like the taste though - just used it as a pudding instead🙂
