I am guessing the actual carb value for the pot is 64g since noodles are a high carb product and then there is a thickener in the sauce, but you are right, that is very misleading info. Hopefully most people would just look at the pot value and not the g/100g, but it is concerning.

I recently purchased some pot noodles (Original Curry Flavour from www.potnoodle.com). There was an error on the Nutrition Information table shown on the 90g pot which I found inconsistent and misleading. If for example the value for Carbohydrates/100g = 21g as shown in column 1 in the table, then it is not possible for the Carbohydrates per Pot to be 64g as shown in column 2. A more accurate figure would be 21g x 0.9 = 18.9g. I am Type 1 diabetic, and rely on accurate figures of food values to calculate insulin bolus. In this example, medicating for 64g carbohydrate, when the true value is 18.9g, or vice versa, would very possibly have resulted in a hospital admission. Fortunately I noticed the error in time.
I had a look at the nutritional info on the Sainsbury’s website, just for instance.
The info is correct, but the carbs per 100g Prepared is 21, ie, when they have absorbed a lot of water, (so most of the 100g is water, and 100g of the prepared product would only be around a third of the pot) and the carbs per 100g Unprepared, ie dry, is 67g.
The carbs, prepared, for the whole pot is 64, but if you weighed it once you’d added the water, it would weigh around 300g, on a rough calculation.
 
@Robin I did wonder if it might be to do with the rehydration. I hate nutritional info like that. It is the same with pasta. You really want to be able to weight out the dry ingredient as your portion and know how many carbs are in that rather than cook it and then be trying to weigh scalding hot pasta whilst trying to serve up food.

I do agree! Lentils are my nightmare, by the time you’ve added them to a casserole, there's no way I’m going to work out the cooked weight. Pot Noodle are doing their best, in giving you both the uncooked and the cooked values per 100g, but because they are both there in adjacent columns, it’s easy to read the wrong one.
 
Gosh yes, lentils are even more difficult than pasta. I was just looking at some in my cupboard and thinking how much I like them but they are so difficult to bolus for and I always seem to need much more insulin than I expect, even in soup.
 
I tried Tyrells root veg crisps the other day. Parsnip, beetroot and carrot. I am not a crisp eater but thought I'd give them a whirl. I am discalculae ( not good at maths) so find tables, ingredients and percentages very difficult. The salt content put me off to start with. It said a per 30g serving contained 12.2g carbs. !00g contains 40.6 g carbs. Won't eat again. I did spike but after eating half a 125g pack! But why are there so many carbs in a pack of root veg crisps compared to eating these veg uncrisped. Also contained sunflower oil which I don't use normally... I use olive oil. Not being one to count carbs it is easier to avoid them how many carbs is generally speaking too many when you read these packet ingredients?

Root veg are quite high in carbs, even when cooked fresh, parsnips particularly and I would imagine these will be sliced and perhaps dehydrated a bit before frying and the frying process itself removes water which will increase the carb content, so lots of reasons why they would spike you but the main reason is that you didn't comply with the portion size. It is a problem with our modern day diet that we simply eat far too much and have totally lost sight of what a portion actually looks like. I am just as bad. I buy big 400g bags of roasted peanuts and then wonder why my BG has gone through the roof because one handful leads to another and then another and before i know where I am, half the bag has gone.
 
I'm like that with parsnip crisps - so don't buy them!
