Meal ideas for family of 3?

Just had a cheese omelette for lunch pre meal glucose was 9.7, I'll do another test in 2 hours time.. The risotto was made from scratch and I have a smaller portion than the rest of the family. Pre evening meal blood glucose was 13.2 and pre bed glucose was 12.4 so I don't think the risotto was that bad but in future I'll be having more mushrooms and less rice. I'm glad eggs are Zero to minimal carbs as we have our own chickens.
Just done my after meal blood test an it was 8.8. That's the lowest blood glucose test I 've ever had.

The porridge is a recipe from this site using measured Flahavans Oats 19g Carbohydrate. The Risotto is a weightwatchers recipe at 75g . The bread is 17g per slice so that would be 34g not including the tuna. That makes a total of 128g for the day. Yes I do test before meals.
Don't forget there are carbs in blueberries and carbs in apple and carb in any milk you might be using either with the porridge or with tea or coffee. It can all add up, but as explained by others, 130g carbs a day is considered low carb but some people need to go lower and some much lower in order to manage their diabetes.
Your omelette is a good option today and feel free to have it with a large leafy salad and some coleslaw to bulk it out, if you like that sort of thing, . I love omelettes as they don't beg you to have bread to soak up a runny yolk. Impressed that your girls are still laying. Mine knocked off to start the moult a month ago.
 
PS. I still think you are likely a misdiagnosed Type 1 but hopefully paring your carb intake down further will prove me wrong. I hate to say it but my gut feeling is that you probably need insulin though.

I am seeing the Nurse next Friday and will request a cPeptide check to find out how much insulin my body produces. I have low blood pressure readings at the moment (90/60) which concerns me. I think I'll try to get an appointment with my GP to discuss my diabetes treatment.
 
Do be aware that the he C-peptide test is not a straight forward one that is routinely done. I had to go to my local hospital for mine because the blood sample has to be frozen quickly and then sent off to the lab in that frozen state and ideally you need to have eaten some carbs an hour or so before, which should push your BG levels up and that should trigger your pancreas to produce whatever insulin it can. So it should not be done fasting I believe. There is a C-peptide urine test which is simpler in that it doesn't need freezing but is less accurate and again needs set patient preparation where you eat carbs so many hours before, so you need to know what to eat and when before the test and they have to have the facilities to store and transport the sample if blood. Ideally you would want to be referred to a specialist at a clinic where they are more used to handling such samples and interpreting the results from these tests.
 
We have 2 types of chickens, Red Star and Speckledies all are still laying so no shortage of eggs. I have never seen the GP about my diabetes only phone calls. I do know a Diabetes Consultant, Marcus Gaston Martineau, but feel I shouldn't bother him as I used to be his Nanny and it just doesn't feel right.
 
I have been reading about carbs and plan meals by carb content. Yesterday I only had 30g and my blood glucose levels have dropped but are still too high. Breakfast porridge 19g ( 2 hours after test 9.5) Lunch poached egg and 1 slice of toast 17g ( 2hours after test 9.0) Dinner Baked salmon and greek salad 0g ( after dinner test 8.9) I have also lost 3kilos since I last weighed my self 3 weeks ago.

What were your premeal readings though? It is the difference between the before and after reading which is important when you are above range as you are.
 
I'm low on testing strips so over the weekend I've either tested before or after meals. Compared to the readings of 14.3 at the highest and 11.4 the lowest pre carb diet I'm delighted that my blood glucose has dropped. 4th October premeal 11.5 after meal 14.9 unfortunately I didn't record what I ate but I'm learning and things are slowly getting better.
