McDonald's sausage and egg mcmuffin is 30g of carbs - will it still be the same amount of carbs with the egg taken off?

Yes because eggs don’t contain any carbohydrate. All the carbs will be in the bread. Well, maybe a tiny bit in the sausage!

Your body may metabolise it slightly differently as you will have changed the balance or carbs, protein and fat.

That’s true, but in terms of carb counting to work out your insulin dose it makes no difference, which is all Gill wants to know. It might change when you get the increase from the carbs, I find it too complicated trying to work all that out though so usually don’t bother. Just adding up the carbs and injecting works most of the time, and if it’s just a one-off then not worth worrying about too much.
