Like many of us, mashed potato has been miles off limits for me. A few months ago, someone posted about Tesco frozen mash having only mild effects on BG. I tried it in 150gm portions and it was fine but I always planned to try my own mash, frozen and cooked at a later date. Finally got round to it and tonight I had a nice fillet of haddock, fried in home-made breadcrumbs ( made with Burgen bread ), fried mushrooms and green salad, and 150gms ( small portion, I know, but reasonable ) of my frozen mash. BG was 6.9 before eating and 6.9 two hours later. Result !!! I know we’re all different and one man’s meat is another’s poison but if you’re missing mashed spuds, give it a go.
