Mackerel with crispy crumb

hope you like my new way of cooking mackerel 🙂

Mackerel with crispy crumb (serves 2)

2 fillets of Mackerel
1/2 a slice of multigrain bread (made into fine breadcrumbs)
2 teaspoons of dried parsley
juice and zest of one lemon

wash mackerel fillets and remove any bones.
mix the breadcrumbs, parsley and lemon juice and zest

put mackerel on the grill skin side up
grill for 5 mins or until the skin is browning and lifting off the flesh slightly
turn over and grill for 2 mins
place the breadcrumb mixture on top of the mackerel
grill again until nicely browned
