Nice lot of veg there 🙂 I had a quick lunch today because I’m on a major cleaning spree - a sourdough sandwich with cheese, orange pepper, red onion, then strawberries, raspberries and Greek yoghurt with granola sprinkled over.
 
I’ve got a cheese and ham sandwich with a satsuma and some mini cheddars. Have a banana packed too but probably won’t need it
 
I had some leftover high meat content sausages with cauliflower cheese and sweetheart cabbage. Just the thing when you come in looking and feeling like a drowned rat!

It's raining here too. Now I've got to go stand in a playground in it to watch my wee girl get piped out of school for her last of Primary.
I want to like cauliflower cheese and broccoli and cheese and I don't mind it but I have to force myself to enjoy it lol x

Blood sugar was 5.1 when I had lunch, 1.5 insulin and now at 7.9. Did have a 15min walk just after too.
This feels ideal for me x
 
I have started serving cooked broccoli with a good dollop of sour cream and chive dip and I really like that combination, both hot or cold. I think there can be a huge variation in cauliflower cheese depending upon how you make it. I really like @Drummer 's recipe which is to par boil the cauli and then coat in cream cheese and then sprinkle with whatever cheese takes your fancy or needs using up.... I tend to use mature Cheddar, red Leicester and Parmesan... and then brown it off in the oven. It is much lower carb and more cheesy than a traditional cheese sauce made with flour milk and butter and works really well with sausages or gammon as it needs a salty, smoky flavour to go with it. Not sure what I would have it with if I didn't eat meat, so maybe that is why you don't enjoy it.
 
I am going to be making a large pan of ratatouille later this evening which is something I really love, so that may be on the cards for lunch tomorrow if it is still damp and dismal or a salad if it's hot.

I love ratatouille but my OH hates it. Odd as he likes peppers, aubergines, onion, courgette and tomatoes but all together yuk.
My cheese sauce for cauli/broc cheese is a dollop of creme fraise with the grated cheese and a spoon of mustard. No flour needed.
 
Sandwich using seeded wholemeal bread, filling was lettuce toms cucumber cheese with mayo & black pepper. Had coleslaw on side with 2 small pork sausages.
 
Ah - lunch - I remember lunch - but that was some considerable time ago.
Last time I had lunch it was just breakfast at noon after driving home after the fireworks.....
 
That does sound nice with broccoli. Will give it a try. Feeling very happy with today so far.

Wow! That’s amazing. You should feel proud!

I generally have the same lunch most days. 2 slices of seedy bread (usually as a salad sandwich) and an apple. A 10-15 minute prebolus generally keeps me in range as long as my basal is adjusted correctly.

Though looking at your delicious lunch I have serious food envy, and wonder whether I need to up my game quite substantially! 😛
 
Boring compared to some but German salami sandwich on wholemeal and a Wispa bar xx

Sounds yummy, do you have fat free Greek yogurt or full fat? I'm so confused, there seems to be differences of opinions
 
@Chris.mac - it all depends who you are, what Type of diabetes you happen to have and whether you are either trying to lose weight or have another condition which requires a low fat diet. Always have a quick look to see who is asking and who is replying - some of us are skinny, some of us are overweight, some use insulin, some don't ......

To me Greek yoghurt should be ideally made with sheeps milk, hence taste tangy so best served drizzled with a small amount of very runny Greek honey, sitting under the hot sun by the seaside on a Greek island at breakfast time .......

Cheese sauce needs more cheese than sauce, so make a tiny bit of mega thick white sauce, (c. a quarter of a pint of milk's worth) add pepper, then more grated mature cheddar cheese than will melt in the sauce plus a large teaspoon of made English mustard, having arranged parboiled cauli in a Pyrex casserole dish/pudding dish, dollop the sauce over it, strew any leftover grated cheese on the top of that and stick it in a VERY hot oven for 20 mins.

I had full-fat but you could have either, as you prefer. I’m Type 1 🙂

I use Tesco Greek Yoghurt if that helps.

Wow! They both sound delicious, I'm newly diagnosed pre-diabetic, trying to do low carb as recommended by my doctor, so far I've lost 5lb in 6 weeks, onwards and upwards
