Low Carb Ice Cream

Relationship to Diabetes
Type 1
Serves 4
Ingredients
1 Cup Double Cream
1/3 Cup Powdered Erythritol
1.5 Tbsp Cocoa Powder
2 Large Egg Yolks
1/2 Tsp Vanilla Extract
Method
Combine cream and erythritol into a medium high heat saucepan, bring to a boil then reduce to a simmer
When simmering add cocoa powder and combine well
In a separate bowl, combine the yolks and vanilla and set aside
Continue to stir the simmering mix until it starts to thicken, once thick remove from the heat and allow to cool for 5 minutes
Once cooled slowly add the cream mixture to the yolks as you whisk
When thoroughly combined whisk until you get a slight froth at the top
Pop in the freezer for 4-6 hours, checking on it and stirring every hour

Got them ingredients apart from the powdered erythritol never heard of it,looks like I'm going to have to get my bike operational again,xx
 
What did it taste like?
I am going to try a coconut cream based ice cream when I have some spare time at the weekend. I have tried a couple of double cream based recipes with mixed results. If anyone has a recipe that has worked well for them I would appreciate the tip.
Don't know, haven't tried it, searched for a recipe as an alternative for those that didn't want to try the avocado ice cream xx

Amazon...Bulk Powders or Whole Foods online Heath...if you have Amazon Prime so don't pay postage might be cheaper there...Bulk Powders have a sale on at the moment...have a look there first.

Definitely for me then Kaylz...I have no intention of trying the avocado ice cream...(so there @Vince_UK )
