LOW CARB CHICKEN & BROCCOLI CASSEROLE

Well I cooked the casserole this evening yeah!🙂I hadn't planned to, so I had to do a spot of improvising by using Boursin instead of Philadelphia cheese.

So with latex gloves on ~ pinny ~ and a hairnet covering my hair:D oolala!haha! I set to gathering the ingredients together. I followed the recipe to the best I could but I did add a large white mushroom, sliced thickly to the pan when cooking the onion. I love mushrooms. I kept pausing the video to keep up with it and I seasoned the casserole with black pepper and mixed herbs. NB: No added salt.
(Note to self:~ Write recipes in notebook or open a file on my Tablet)

I set the gas oven at Reg5 with fingers crossed as I didn't know the conversion rate from elec to gas but it did need cooking for an extra 10mins at that Reg. Lesson learned.

Result: A very tasty casserole meal which I can highly recommend to all you low carbers! I think the recipe could be adjusted by adding one or two of your own favourite veggies if you wish ~ and/Or cheese but imo it's tastes good as per recipe. I didn't use a lot of cheese at all, but this was my choice.
*I only used one chicken breast and served my portion with a side dish of carrot sticks and garden peas for presentation.

*Cooking for one person.
