Low cal and low carb tomato soup

I had some vegetables and liquor left over from my slow cooker casserole, and found they made an acceptable soup. So I tweaked it to come up with this recipe.

Serves 6 300ml portions: 50 cals and 8.8gm carbs per serving.

1 large red pepper, chopped
1 large yellow pepper chopped
12 button mushrooms, halved
1 large onion, diced
1 400gm tin tomatoes, chopped, or chop it yourself, or 400ml tomato juice (I save the juice from tinned plum tomatoes)
1 teaspoon sugar
2 Knorr vegetable stock pots or make your own as suggested below
1/2 pint water +
Italian seasoning (optional)

Put everything in a large saucepan, bring to the boil and simmer until the vegetables are tender (about 20 mins)
Blitz. You can add water if it's too thick. Season to taste.

Yum! Home made soup is The Best!!

Agree with ll the above. If you keep a head of celery and a some carrots in your veg tray, you can chop up a couple of celery sticks and a couple of carrots instead of the veg stock pot.
