Really needing inspiration for lunch ideas, there's only so much sandwich ideas I can come up with and getting rather bored of sandwiches anyway - fire away please 🙂 x
 
Sounds good but I'm not low carbing so trouble would be finding the carbs to add to it x
 
How about a tuna nisoicse. Or make up a nice wrap with some healthy salad stuff in.
 
I got fed up of wraps before diagnosis haha, my OH used to come home from work permanently as his work mate would make them for me, also fed up of tuna as ate that a lot for years :( plus the cat becomes a nuisance as soon as he smells it and can't shut him out as we don't have a kitchen door now :( (nothing to do with being rough or anything by the way just realised how awful it must sound, we had to take it off so the fridge freezer would fit it the kitchen lol) I was thinking about crustless quiche for tomorrow but currently undecided x
 
How about Cous Cous and throw in some peppers, carrots, sweetcorn, peas, meat of your choice

Hmmm I've never tried cous cous and not sure on how my levels would react, I'm worried that it would react the same way it did with pasta so I'm uncomfortable with trying new foods at the moment, that' part of my problem, I like fish, meat etc but it's finding carbs to add to it that's more of the problem :( x
 
How about making a Pearl Barley Risotto and then having the leftovers the following day. I'm OK with Cous Cous and with Barley and it doesn't create big spikes with me
 
Is Kedgeree an option. Not sure if the cat would create though 😛
 
Scrambled egg and bacon with toast
Cheese and tomato on toast ( I make mine with parmesan cheese)
Prawn, mackerel, cheese or ham salad
 
Thanks for your suggestions guys but I think I'm going to give in to temptation and have a crisp sandwich 😳 I've been fancying one for ages but always managed to resist, please forgive me for this 🙂 x

Hmmm now the dilemma of what kind of crisps to get x
 
It would be cheese and onion for me! As you match insulin to carbs there really is nothing stopping you having a crisp sarnie occasionally 😉
