It depends what kind of things you’re eating and what they do to your blood sugar really.

I’ve just had a hot roast beef sandwich on half a round of low carb bread, it was delicious but now worried

What are your worries? If it’s a meal that normally works okay for your blood sugar then the time being a bit later shouldn’t be an issue.

I’ve not been diagnosed long so wasn’t sure if eating late before bed would be cause any problems
 
People on insulin or some tablets like glicazide need to make sure their BG is high enough before bed so they do not risk having a hypo, but if you are only on diet or metformin this isn;t a problem.
 
It depends what you eat, really.

Generally, high protein and high fibre foods are recommended before bed. For example, a boiled egg, etc.
 
I've been having an Oatcake or two with cheese before bead on a lot of days lately. The carbs are low GI and so seem well-tolerated. My waking BS is usually too high lately, but no higher after a little late snack and I'm waking up feeling less hungry when I do this.
🙂 I shall have to investigate low carb crackers.
