Tried this recipie from the main food section of the diabetes.org website and have to say it was absolutely fab. Well worth a try and very easy to make.
 
I like to make mine with a savoy cabbage and Chorizo. I have tried Kale but it was not to my taste.

The german recipe calls for Mettwurst but the closest I can get is chorizo. All you need is a savoy cabbage, some carrots cut into rounds and sliced chorizo. You can put in potato if you want but I never do. Then just cook the lot together until the carrots are soft and season to taste.

I never season before it is cooked as the chorizo and mettwurst are highly seasoned already. Great winter warmer.

I have also done this in the slow cooker while I was working. Portion it up into freezer boxes and you have a quick and easy meal for days. Good for packed lunch in winter although my colleagues did complain about the cabbage smell in the office! 🙄

Thankfully the accompanying sound effects came later once home 😱😳

You can get Mettwurst(or similar) in lidl.I find chorizo a bit rich and fatty for soup making.
Got an ace recipie for roasted mushroom and garlic soup which is brill.

Yeah - been reading about and it it's quite 'the superfood' I made celeriac dauphinois on Sunday - omg super tasty and low carb (not low fat). So nice to try some different veg. I've used celeriac to make soup recently and that went down a treat too.
