All those things you mention with the exception of the rice/noodles and potatoes where portion size would be important, would be absolutely fine for managing blood glucose as they are pretty well zero carbs.I think I ate a relatively balanced diet, such as eggs & bacon, or similar ay breakfast, salad and protein at lunch, or noodles/rice, then meat and veg/salad with potatoes at dinner. Calorie wise I've been in deficit on average 700 calories daily.
I only had a few bites because it was so bland....and on the BHF website it says only low fat things whereas the diabetes website says no to low fat.....it's very contradictory.
I think I'm struggling mentally as my relationship with food has always been bad and this just makes it all the worse.
It is very hard to take account of both carbs and calories so people often take either a low carb or low calorie approach but obviously its carbs that convert to glucose and that is what you need to manage better.
You can have all sorts of dressings on your salad, mayo, or home made ones with lemon, herbs, balsamic vinegar.
I think you are being overly strict with your self.
