It all depends on how you react to it - I'd not be able to cope with the bread in the morning, but I am more insulin resistant then, some are more insulin resistant in the evenings.
To answer your question, you need to test your blood glucose to see how it changes.

I've never been told I need to test my blood ? It's just diet, exercise and meds

Just 5 minutes ago had results of Diabetic Review and Blood sugars have reduced from 7.4 to 6

I'm so happy with that
 
Looks lovely but like @Drummer I would avoid the bread and just have 2-3 egg omelette with whatever filling I fancied, a large leafy salad and a big dollop of coleslaw (usually cheese coleslaw). After that I am unlikely to need food until my evening meal.
We are all different so testing tells you what your body/diabetes can tolerate and whether that breakfast is a good choice for you. Looks delicious and definitely lower carb than a bowl of cereal and hopefully you enjoyed it, which is also very important.
 
Can I come round to yours for breakfast @Mica P? Like others here I would miss out the toast (except occasionally) but it is full of goodness and looks super-tasty 🙂 As you have done so well getting your BG down I think you are entitled to a slice!
 
Thank you. I'm learning every day. The thing I struggle with is variety. I tend to have the same meals and I don't want to get bored. I do find breakfasts difficult as I don't want to always have eggs. Have a good weekend
 
Creamy Greek natural yoghurt with berries and mixed seeds/chopped nuts is a favourite around here for breakfast. Or how about steak and mushrooms or cabbage and bacon or a selection of cooked meats and cheeses with pickles. No reason why breakfast has to just be eggs.

I find eating low carb is far more interesting than 'normal' diets.

Have a look at the thread What did you eat yesterday in the food forum as people post what meals they have and you will see people do have plenty of variety. Just bear in mind that people will be on various dietary regimes or oral meds or insulin so will have a different amount of carbs they will tolerate.
But it will give you some ideas. There are also some recipes there as well.
 
The mixed nuts on breakfast yogurt sounds great but can't find many shops where the suggested nuts reasonably priced
