I'm really getting fed up of eating the same things so could anyone give me some inspiration, info included could be a typical few days breakfasts, lunches and dinners and carb value? thank you in advance guys 🙂 x

I think we all need a bit of inspiration with our meals at times, it's so easy to get stuck in a bit of a rut. I wonder if you've looked at the websites that accompany some of the food magazines? I like the recipies on the Healthy Food Guide magazines site (hope this doesn't count as advertising!). There is a recipe section but that seems to have changed a bit recently, so I find it easier now to type a food item or ingredient in the search box and plenty of suggestions follow. The recipes are all pretty quick and easy, (nobody wants to stand cooking for hours), easy to change ingredients and quantities and, importantly for us, they have detailed nutritional information. BBC Good Food can be helpful too. Sorry to ramble, I don't work for them, honestly . Hope this helps.

Breakfasts

Greek yoghurt 100g and various berries - about 10g carb depending on the berries.
Eggs and bacon - no carbs
Egg muffins with various fillings like peppers, mushrooms etc - no carbs

Lunches

Smoked mackerel with poached egg and salad.
Tuna salad
Many many types of salad
I like stirfried veg with poached eggs on top
All the ingredients for fajitas except the wrap in a bowl - love this

Dinners erm I'll come back to you 🙂. Sorry they are all pretty dull!

I eat duller than this! this is a gourmet menu to me! 🙂 I'd love to go about eggs and bacon and omelette but I'm not sure on blousing for it! lol xx
 
No bolusing required for eggs and bacon 🙂
Salmon and roasted Mediterranean veg
Omelette and salad
Cottage or shepherds pie with cauliflower mash top (yum!)
 
Some people have problems with the protein though, I'm that bad I limit myself to one scrambled egg with my toast for breakfast! :( x
 
You could do with increasing your protein a bit though I reckon Kaylz because you said you're losing weight.

Do you like tinned sardines, salmon, prawns etc? What about a nice beef steak?

Do meal suggestions include what your mum and grandad will eat because from what you've said, that won't be easy hun! Lol 😱

Hmmm never tried sardines, don't like the look of them when I've bought them for the cat! Lol, I like most other fish apart from salmon, so prawns I could do for lunch! What about mackerel I like that! Only meal that concerns them is dinner! Grandad not so bad, its mum that's the bigger fussy problem! xx
 
Do you never do one pot meals like casseroles, chilli, spaghetti bolognese, lasagne, pasta bakes Kaylz? As you can bonus for these things and don't need to watch your weight, I'd jump at the chance of being able to do that. I know it's harder when the family have to share and you're very anxious about calculating different meals. But give it a go! You can afford to stretch yourself a bit more with meal choices.

Tonight we had chicken fillets I'd flattened with a meat pounder and marinated. I topped them with Cajun spices, pan fried and served with a big crunchy salad with feta cheese, sun dried tomatoes and a spoonful of sweetcorn (and a dollop of coleslaw).

Last night I did chicken thighs in home made cream peppercorn sauce and served with rice and broccoli (tiny bit of rice).

Night before I made salmon fillets topped with chilli prawns, a couple of new potatoes and vegetables.

I usually have eggs in some form for breakfast but you could have one poached egg on a slice of toast but put a nice slice of ham under. You need building up! 😛
 
I read a lot that people have problems bolusing for pasta etc and having a late spike oe whatever, I don't want that and cant afford to have it happen either, I also don't get the time to poach an egg in the morning! Lol I don't like cold egg unless its boiled and wouldn't be quick enough to poach after I've bloused :( I'm really struggling with a fear towards foods at the moment too but I mentioned this in the email I sent to my DSN yesterday so that will all be discussed at the appointment next week! I feel so weak due to all of this but hoping to get it sorted ASAP as I cant continue the way I am, at 5ft 5 and 7 stone I am underweight and I look it too! xx

Until you get over this fear of food Kaylz, I don't think any suggestions are going to help. 'You don't get the time to poach an egg in the morning?' Fry one or do it in the microwave. It takes 3 mins in a pan or 90 seconds in the microwave.

With my breakfast I have to eat almost immediately after I take my insulin that's the problem I have with getting a hot breakfast that's all x

I'm unsure of injecting after and as I have OCD too I don't like touching things then touching food or the opposite way round either, whats the worst that could happen? I could put my eyes in an even worse condition than they are currently
 
@Kaylz if you are worried about protein converting with eggs bacon etc then add a slice of toast and bolus for that - you won't need to worry about the rest then 🙂

Try not to worry about pasta potentially spiking etc - it never has for me and everyone is different. Plus if you do spike then put it down to experience and next time you could do things differently or decide you are not ready to do the experimentation with it etc.

Your levels are amazing so please try not to worry.

I do have toast with my scrambled egg for my breakfast or just as a wholemeal sandwich, so if I'm having the toast I could increase to 2 eggs and it wouldn't do any harm? and maybe also add cheese? sorry still rather confused about some food items and that :( x

No no harm. My understanding is that the protein breaks down when there are no carbs etc to break down as a sort of substitute glucose so if you are eating carbs anyway then the protein doesn't break down into glucose. Hope that makes sense. So eat away and enjoy 🙂
