Ideas for soups and stews without heavy carbs ?

I agree but I tend to buy the plain salad bags and just add tomatoes, spring onion and cucumber

I am not one for fancy salads
I put all sorts in my salads, spinach, nasturtium leaves and flowers, rocket, fresh herbs like mint, parsley and fennel. The people at work used to say I had weed salad.

I read today on one of those basic keto guides that blue cheese and ranch salad dressings are ok ?

Which is great as I don't like those vinegary sharp tasting dressings

And mayonnaise is a bit thick
 
If I cook a veg stew with meat such as pork or chicken , eat then let it cool and put it in the fridge how long do I have to use it up ?

And would you suggest slowly reheating it portion by portion on the hob or microwave ?
If you bring it to the boil for a minute or so each day you can go on eating it until it is all gone no matter how long that is.

You can always 'thin' the mayo down with a bit of cream or creme fraise or milk.
Cheese is fine.

I use peas in a chilli instead of kidney beans but if a tin used sensibly is OK?
Some folks sub (pitted) black olives for the kidney beans.
