Ideas for a reluctant veggie cook please?

I don't mind Quorn but it's about the only one of that kind of thing I've tried that I'm keen on and not really with it trying to masquerade as something else. I used to be vegetarian many many years ago and enjoyed it in sweet and sours, as mince in sauces and even a kebab on the BBQ. When I was looking at cholesterol after my diabetes diagnosis I tried a variety of supermarket meat substitutes and most were vile. I've not seen them for years but the old Bean Feast packs were great - soya protein ready to just add to boiled water with the flavour included for different things.
