Iced Bloody Mary Soup

Relationship to Diabetes
Type 1.5 LADA
Serves two

Ingredients
500ml water
500g cherry toms, blanched, peeled and chopped
1 clove of garlic finely chopped
2 shallots ditto
2 tspns olive oil
S&P to taste
A shot of vodka

Garnish

A few basil leaves shredded, or
A spring onion finely chopped, or
A stick of celery ditto, or
A chopped red chilli, plus
A drizzle of yoghurt, or cr?me fresh, or Worcester sauce, and
A slice of wholegrain bread cubed and toasted

Method
Heat the oil and soften but do not brown the garlic and onion add in the toms and water. Season and bring to a fast simmer until the toms are cooked. If you want a clear soup, strain off the liquid and allow to cool. Otherwise liquidise it, add the vodka and place in the fridge to cool (you can also freeze and serve it like a sorbet or as ice cubes). Serve with any or all of the garnishes.

No, you can leave that out and call it Iced Virgin Mary Soup instead. I often do it that way, it's just as nice.

If you want a more robust soup add a handful of pinhead (fine) oatmeal to thicken it and serve it hot.

Fraid so, that's been my downfall, I love feeding folk (and myself of course). :D But I'm reworking all my recipes now to cope with my brave new world.
