Can anyone recommend a "diabetes friendly" ice cream please? Now that summer's here I'm really craving ice cream but they all seem so high in sugar. I used to have frozen yogurt but have had trouble getting it this year - it looks like it's been taken off the shelves in favour of premium/high end tubs of luxury ice cream intead! :-(
 
I have an icecream maker - if no one will make icecream I can eat I decided I would make it myself - my grandmother used to do small scale ice cream manufacture and it was wonderful - I remember the taste from being very young.
The basic ingredients are cream and eggs, made into a custard.
 
If you have no ice cream maker, you could try frozen berries blended with mascarpone and a dash of vanilla extract, eat immediately or freeze for later.

Just made this with frozen strawberries, no added sweetener needed, Delicious, had with some jostaberries on top.

I used to use "Franks Diabetic Vanilla", now renamed "Franks Dialicious Vanilla".
 
Here's an easy recipe that you can make with or without an icecream maker. It mentions stevia but other sweetners will work. You can also use different berries.

Clotted Cream & Frozen Strawberry Ice Cream



Prep Time
5 minutes

Setting time 1.5 hours

Serves 4

Ingredients

400g Frozen Strawberries

225g Extra Thick Double Cream

1 tsp. Vanilla Extract

1-2 tsp. Truvia

Preparation Method

  1. Blend the strawberries, leaving a few large chunks
  2. Add the strawberries and remaining ingredients to the container of the ice cream maker.
  3. Switch the ice cream machine on and set to prepare the ice cream according to the machine’s instructions.
  4. Alternatively, combine the mixture in a container and place in the freezer.
  5. Take the mixture out of the fridge every 30 minutes and mix using a whisk or spoon.
Nutritional values per serving

Calories 361kcal|Carbohydrates 8g|Total Fat 36g|Protein 2g|

Macronutrient ratios per serving

Carbohydrates 9%|Total Fat 89%|Protein 2%|
 
I have seen people with type 2 recommending Oppo ice cream.
Out of interest, I tried it and found it taste chemically which I guess is the artificial sweeteners.

But we all have different taste so it is worth trying for a low carb ice cream.
 
i've had oppo ice cream i had it delivered but now they've stopped delivering and only sell in supermarkets but not morrisons,i found it ok and loved the differant tastes.
