Breakfast .......porridge with chopped banana and apple

Lunch ......tin of sardines in tomato sauce with cous cous , onion and cherry tomatoes

Tea tonight ........chicken breast pan fried in onion , garlic and mixed herbs , with stir fried vegetables

? Any advice gratefully received

Is porridge high carbs ? Is cous cous good rice and pasta alternative ? Are bananas the devil's food for anyonexwith diabetes ?

Your breakfast is carb heavy> I did a breakdown of the Oatibix version in the other breakfast thread you posted on. Porridge is high carb same as any other grain produce (all grains are about 60-65% carbohydrate.... so yes couscous is also high carb being made from wheat, but if you only have a dessert spoon or two then your body might cope OK with a small portion, particularly if you are active before and after lunch to burn the glucose off.... a brisk walk or gardening can really help reduce the impact.
Evening meal looks like a great low carb option.

If you want pasta then edamame bean or black bean pasta is low carb but with things like rice, couscous, bulgar wheat it is portion size to be careful.
I don't know if anybody mentioned Carbs and Cals book or app as it was and is my bible helping to make better food choices.
