Honey as a sweetener

I found a good selection of recipes at www.sugarfreerecipes.co.uk but they use honey in some recipes. I assumed honey was not advisable! Does anyone have any ideas on this please? I want to try some cakes with sweetener for my hubby but don't know whether to use honey or not.

Hi Di, I would say that unfortunately there's not a lot of difference between usnig sugar or honey - they will both elevate blood sugar levels. I use honey to sweeten porridge, but in that case the oats lower the effect as the food is digested more slowly. Perhaps worth looking at candarel or splenda websites for recipes?

I do have some Splenda I think so I'll try that instead of honey.

I think that the sweeteners react differently in the baking process to ordinary sugar, but I can't be any more help than that 'cos I can't remember where I read it! Good luck with the baking!🙂
