As @s'nic suggested, try out some recipes and adapt them to your taste.
I am working through my own recipe collection and reducing the carbs by substituting self raising flour with 50% almond flour and extra baking powder.
Adding a bit of ground cinnamon or vanilla paste allows me to reduce the sugar without losing too much sweetness. I am not a great fan of artificial sweetener. My waffle recipe only has 25g sugar and makes 6 large waffles. It's 50% almond flour and freezes well. I have half of one occasionally with berries and cream as a treat for Sunday breakfast. Less than 20g carbs.
 
Hadn't come across Grapetree but looks good, their flour is pretty well priced.
The quality is pretty good as well.
Look at their online site, as some of the bargains are not available in shops, and over a fairly reasonable price it is free delivery.
 
lol, don't get me started on the 'healthy' and 'sugar free' recipes .... so many I find list honey, or some variety of syrup as a sweetener rather than that awful sugar o_O
A couple if times a week I have a thin spreading on toast of manuka honey. I don't think there's any real evidence to back it up but the story from different sources say it has many health benefits. I only take it for that reason, otherwise I have never liked the taste.

Allinson's Batch Baked Scandalous Seeds Wholemeal Bread 650g.​

I love this it is the tastiest bread I have ever had. I have two slices most days either as toast in the mornng or lunch as a sandwich. It is 13.4 g per slice but oh so tasty. I think the days I don't have it more than make up for those days I do, and I never exceed two slices.fot those days I do.IMG_2178.jpeg

That sounds awesome, I've been planning to make some american style pancakes (with blueberries), I would imagine this would work for my planned pancakes too - what do you think?
(the pancakes could also be frozen, and cooked in appropriate sizes for carb limits)

I have tried small pancakes made with rice flour and grated apple instead of regular flour for my SiL as she is gluten intolerant. They turned out OK. Not tried to convert to a low carb version yet but I will let you know how I get on. I don't add sugar as the apple with a pinch of cinnamon is sweet enough.

I've made bread before and substituted half of the white bread flour for wholemeal bread flour and made sure I only baked a small loaf - that way I'm 100% guaranteed not to eat too much of it!!

Also open-top sandwhiches are always good - like a normal sandwich except you dont put another slice of bread on top of the one with the filling on it. All the taste of a proper sandwich but litterally using half of the bread.
 
There is a Holland & Barrett in my town who deliver. My friend's hubby is not diabetic but he is strict KETO and makes his own bread in the oven, he gets his flour delivered from H & B. He uses Oat flour, she says his bread is lovely. I didn't think to ask him but they do sell different low carb flours I had a look

One of the things I notice is whenever I look something up that has the word "diabetic" in it, loads come up saying, " sugar free cooking/baking for diabetics" great lack of knowledge across the board with no mention that these recipes should in addition be low carb, whether low sugar or sugar free.

How can he be strict keto if he eats bread made from oat flour, that would be pretty high in carbs no? Could maybe have 1 slice a day but that would probably be 20-25 grams in 1.
 
I get bread from Heylo, www.weareheylo.com. The slices are tiny but it tastes like real bread and it's quite chewy so you feel full. It does have some wheat flour but mostly soy flour, pea flour, etc. The brown loaf has .8g carbs per slice. It doesn't affect my BG levels at all, unlike normal bread. If I know we're going somewhere where my husband might want to buy a sandwich, I put a seeded roll in my handbag, buy a sandwich and transfer the filling. The lucky birds get the bread. Also, Waitrose stock LivLife bread which is nearly as good.

I thought it was an error and it was oat bran, which is used quit often in low carb baking.

yes I thought that too but I don't think he has much of it. I love my fruit and veg there is no way I could be keto.
