The amount of carbs to eat is probably just less than the amount you can cope with - as we are all different the easiest way to find out what that is, is to use a low cast glucose meter and check before and after eating.
I use a Spirit Healthcare Tee 2+ meter, though not much these days.
Sugar is a carbohydrate, along with starches, they are digested and absorbed into the bloodstream, and stay there for too long, so removing the high carb foods, the very sugary or starchy foods, and replacing them with something lower is going to result in an ordinary type two going into remission and having normal numbers.
I find that being able to eat meat seafood eggs and cheese along with stir fries and salads, or making curries and stews pleases me far more than the stodgy stuff I was told was healthy and resulted in me becoming almost spherical by the time I was diagnosed.
