Rhubarb is extremely good, only 1 gm of carbs in 100 gm wt. BUT only if no added sugar. I am lucky enough to now have a thriving rhubarb patch in the garden and by using only the lower 3/4 of each rhubarb stalk there is enough natural sweetness to make unsweetened stewed rhubarb surprisingly pleasant and acceptable; discarding the top bit makes a big difference. Even better with some fresh ginger included in the stewing mix.
 
I was diagnosed Pre-D around 3/4 month ago, I literally was your chocoholic, couldn’t wait to finish evening meal so I could start eating sweet things,, I like you was very scared on how I could manage this, I was determined from day one I would reverse this and not go down the Type 2 route. It took about 2 weeks to accept that I was no longer craving choc etc, I have to say I have totally lost my sweet cravings , my go to is fruit , strawberries, banana, apples , in the evening I have Greek yogurt with fruit of choice and flaked almonds , I also allow myself 2rich tea biscuits a day with coffee, I’ve lost a little bit of weight but the good news from all my efforts I’m no longer Pre-D.I would certainly get the BG monitor, when you see your numbers at a good level it will really motivate you to all the effort is worth it. This group has been invaluable to me, everything I’ve learned has been from the group , not even see my GP, no question I soon found out was silly, Good Luck
 
Yes, I love raspberries too, but they are more expensive. Strawbs are just coming in now as the English season gets underway - hurrah!

Congrats on no longer being a chocoholic (I suspect really just a sugar addict - unless you craved high cocoa dark chocolate) and no longer being pre-diabetic. But careful about bananas which most T2 diabetics (even those in remission) can't handle like the average person can.

My (now late) mother in law correctly described grapes as 'individual little bags of sugar' cos despite the larger ones having pips, they are absolutely NOT berries - so please don't be fooled thinking they are.
 
Oh and PS - a family favourite when I was little was my godmum's rhubarb and sultana jam, which my mum could never cultivate enough rhubarb to make, but there again her blackcurrants grew so huge we never needed to buy jam anyway!

Do you still have to bank rhubarb up with soil to blanch it?

I have never heard of banking up rhubarb, though when I was a teenager we used to do that with celery.
What I do with rhubarb is to 'force' it. I but an old dustbin over a clump and weight it down so it won't blow off.
This makes for an early crop of milder (less sour) rhubarb, which is a low carb veg - though always treated as a fruit!
After stewing it I eat it with full fat plain Greek Yogurt - no sweetener require for it to be to my taste!
