I agree with @Lily123 She is not diabetic, so her insulin production is not the issue. Her HbA1c would likely be over 100 to be getting those sort of symptoms from diabetes and 27 is a really good normal number.
You need to press for further testing to identify the cause of those symptoms but I would say that they are not caused by diabetes with an HbA1c that low.
Obviously, if she has been unable to digest her food then that will cause her to become very thin and it will take time for the Creon to allow her to build back up. Is she taking enough Creon? I understand that the worst that happens if you take too much is that you become constipated but too little and not only doesn't it work but I believe you have urgent explosive toilet visits.... if you are lucky enough to make it to the toilet. The right amount of Creon is very much trial and improvement from what I have read. Could the thirst be down to dehydration. Is she managing to eat and if so, what is she eating and does she take the Creon with every meal?
I can totally understand how worried you must be but unless her HbA1c and finger prick were done some time before these symptoms started happening then I think diabetes is a red herring, but that doesn't mean that these symptoms should not be investigated by your doctor as she is clearly unwell.
