Yup it is so very different but the bonus is with a bit of work you are very likely to end up healthier and fitter. than you have ever been, True !!
 
If you like cauliflower, save the stalks and leaves. Make soup with these and an onion and a pile of cheese. Gorgeous and mostly made from things that would get thrown out.
Sorry to be really dim, Radders, but do you just chop and boil these all up in stock? Do you add anything else? I confess I'm not a cook...:confused:

Pretty much. Soften the onions first in butter, then add the chopped up stalks and fry them, add stock, simmer, liquidise, add cheese and spices, and voila!

I do a similar with any left over cauliflower cheese, make up a pint of chicken or even better porcini mushroom stock, and blitz it with the cauliflower cheese, add a bit of cream to thicken if needed, and pepper or chili to spice it up a bit.

I must admit that the words "leftover" and "cauliflower cheese" are not often heard together in our house!
 
Charlotte, I can totally appreciate your frustration. Sorting out carbs and sugars, fats, etc isn't an easy equation. I was diagnosed T2 a bit under a year ago and am still struggling and my wife is really confused about the best foods to prepare.
There's a book "Carbs and Cals" (Amazon) that is quite good for assessing the carb,though not sugar content and other contents of various foods and also comes in an app for Android and iOS. May be worth a preview.
Also for very much more detailed info, the "Composition of Foods Integrated Dataset" gives info about carbs and sugar content of almost 3000 foods and much more. It's an Excel spreadsheet and quite big but can be cut down to suit your needs. Can be found by searching for COFID.
Another resource, again in Excel format is the Diogenes file of foods, again a few thousand, giving carb content and glycaemic index and glycaemic load.
As far as soups go, best way to go is DIY!
