Almost a year into T2 , and am coping but the weather has changed and I am cold!!!!! Today I am cold and I do NOT want salad etc for lunch!!!!! Today, I am so hungry....no soup ready...I have just had 2 slices of white bread toasted with butter and pate for lunch. I don't do breakfast anyway and dinner tonight will be ostrich steak and veggies, so that's sorted. Trying to stay low carb, but the lower I go, the colder I am and the more my feet are painful. I have bought thermal socks which are great even in bed........not very sexy!!!! I have upped my carbs to about 50 l 60 +, but have put on several pounds. I am looking better than before but feel that I am going round in circles and goodness knows knows what the DN will say next month . B12 injection this afternoon so I hope that will make me feel brighter as that's part of the problem as well......the side effects of Metformin .

Have something else then? Can’t tell you when I last had a salad, not a fan. There’s no requirement for diabetics to eat salad or even to eat low carb unless they want to.

If more carbs makes you feel better then eat more carbs than you are now


I have upped my carbs to about 50 l 60 +, but have put on several pounds.
Unless you’re eating more calories than you need overall then it won’t be fat you’ve gained, just a bit of water. Carbs don’t make you fat unless you’re eating more energy overall than you use up.

Unless you’re eating more calories than you need overall then it won’t be fat you’ve gained, just a bit of water. Carbs don’t make you fat unless you’re eating more energy overall than you use up.
Type 2 treatment is very often to lower carb. Not many type 2 get insulin unfortunately.

No soup in the freezer?
Stir fry veg, scrambled eggs, cheese on toast.
 
I can make a really warming satisfying stew in under half an hour - and that includes chopping up all the sad bits from the fridge.
I am just making one at the moment -- the swede and onion have just been cooked in the stock and I've left it to cool down. it will be bulked up with half a bag of frozen mixed veges and the already cooked meat.
If using raw meat it would go in with the swede and onion.
The plan was for scrambled eggs for breakfast, but once again it is mid afternoon and the eggs are still waiting, unbroken....

I believe it is a Middle Eastern egg and vegetable dish that is usually eaten for breakfast.
I would describe it as eggs poached in a spicy tomato and vegetable sauce.
Although there are probably "official" recipes, I find it to be a great way to use up whatever I have left in the fridge - peppers, courgettes, aubergine, onions, mushrooms, feta, ... with a tin of tomatoes and a large dollop of harissa. Simmer for a while and then make dips in the mixture to break eggs. Cover and cook until the egg is done.
I serve with a hunk of fresh bread but it is probably filling and less carby on its own.

If you prefer to eat more carbs and adjust medication to manage that then that is absolutely your choice. Has your nurse / doctor actually said to you “no you can’t have any medication you need to reduce your carbs to 50-60g / very low carb”
 
No, the nurse just said go as low as you can. That was at the start and it was fine, levels dropped to 51 from 94, and it was no problem as I was not a huge carb eater anyway. Summer, it's easy, but yesterday I just wanted carbs!!!!!!!!! Lunch is always tricky as I don't really cook for that, soup was finished and I was just feeling a bit off. Thanks. Bytbe way, I like shashuka, husband does not.
 
I like a stir fry with meat/prawns and a creamy sauce, but use Konjac noodles. Nice and warming. Especially as I put chillies in it.
A nice daal is good for winter. Or a baked tray of brassica and paneer marinated in a spicy yoghurt sauce.

I'm a long way into low carb living, so have developed strategies along the way.

Firstly, I'd suggest it might be an idea to ensure your thyroid isn't having a tough time at the moment. My biggest, most horrid thyroid symptom was feeling cold, all the time (and I mean ALL the time). If that's fine the look for other avenues.

When trying to get into LC living, I cooked some "insurance policy" foods, which were things like chicken drummers or thighs, decent sausages, hard boiled eggs or bacon. Athough these days most of those things can be made in the airfryer in under 30 minutes (larger chicken thighs would be an exception, probably). I'd also always have a jar of bullion powder which is tatsty and hot for those times you just need to warm up.

Leftovers of last night's dinner, or scrambled eggs are pretty quick too. Sometimes just upping what you have at breakfast works a treat too.

I appreciate if you aren't taking any prescribed meds (your profile doesn't list any), the your diet is your medication

If you are losing weight fast, or too fast, then simply eating more of the LC stuff can help. I must admit to being a salad lover year round, although I'm somewhat off it at the moment, but that follows a period of being unwell, so not myself.

Be kind to yourself. It sounds like you're doing all the right things. Sometimes achieving a balance is a bit trickier than others.

It’s good that many T2’s don’t get insulin. It means that we can manage without it.

I think you mean Middle Eastern/North African. It has different spice to Indian foods: most recipes include harissa with hints of rose.
Although I can imagine parathas are good for dunking and you can certainly do an Indian version with different spices. I have seen a Mexican version so why not Indian ... or Caribbean or Italian. I now feel the need to experiment 🙂

Ok I had it first in India so I associate it as being Indian though like many Indian foods the origin is elsewhere.
And yes...it's addictive, very yummy.
 
Well, I don't know where to start, BUT , I must thank you all for the wonderful supportive replies!!!!!! Xxxx . This is what this forum is all about!!!!
I had my B12 yesterday afternoon and although the nurse asked 'how was I ? ' she knew and I knew that she really was not remotely interested. Jab in arm, job done!
Just had lunch after the joys of Tesco. Last night's other steak chopped , with tomatoes and mayo with horseradish. I like things like that. .....today it's enough, I am not so cold, vest under my jumper ,pop socks on, weather a bit milder. Anything to do with the B12?????? No idea, but with the support here I shall do my thing.
