Hi, newbie to the forum. Diagnosed T2 2 years ago and struggling to achieve remission. Im looking for food inspiration as Im so bored of food.

No need to be bored with some of the recipes in this link https://lowcarbfreshwell.com/ or the Caldesi cook books or Pinch of Nom books, or just put low carb recipe with whatever ingredients you want into an internet search.
Hard to suggest specific meals as we don't know what your tastes are.
The other website is sugarfreelondoner that one of our/ posters makes low carb cakes and biscuits on a weekly basis.

What have you tried diet wise to lower your levels?
Are you on any medication for your diabetes and if so what?
Do you know your most recent HbA1c result and has that reduced since diagnosis. ie. Is what you have been doing so far giving results.
Do you test your Blood Glucose (BG) levels at home or just rely on 3 or 6monthly HbA1c tests to indicate how you are doing?

Sorry for bombarding you with questions but the more we know about your particular situation, the more appropriately we can advise you.

It is true that some Type 2s are unable to achieve remission and some achieve it but struggle to maintain it, but certainly a good percentage are able to achieve remission and maintain it and we have a number of members of the forum in that position, so it is certainly worth trying. Sometimes people fail because they follow NHS dietary advice which isn't always suitable for some Type 2s and some people find other stricter diets too difficult to follow long term and some people have damage to their insulin production perhaps due to diabetes which has gone undiagnosed for too long and by the time they are diagnosed it is past the point of reversing. There really isn't enough known about why some people are successful and some aren't. Even if you can just manage it well, that is enough, but obviously remission is an ultimate goal for some people. I am Type 1 so no hope of remission for me, but it doesn't stop me from being fitter and healthier than I was before diagnosis and ultimately that is the goal, to be as fit and well as possible. Remission is just the cherry on the cake..... probably not a good analogy to use for us diabetics though 🙄
