If you miss rice, there is the option of using konjac rice. You can get noodles too if you prefer. It is largely just fibre and almost carb free. The main supermarket brand is "Bare Naked" but there are other brands and I got some a lot cheaper in B&M stores. It comes in a pouch with a preservative fluid, which you have to drain off and rinse really well before heating, as the preservative smells a bit fishy. I am not a fan of fish but once well drained, it no longer smells or tastes of anything much, certainly not fish and the texture is similar to rice/noodles.
Alternatively, some people use "cauliflower rice" (grated cauliflower) as a rice substitute.
 
You may also want to try a small portion of Basmati - just a few tablespoons. It's the gentlest of the rices in my experience. But cauli ‘rice’ has a lot of fans here - and of course you don’t have to limit it. It can be steamed from frozen making it super-speedy.
