I love rhubarb but cooking it without sugar would be unpalatable. I was wondering if Silver Spoon Half Spoon Sugar would be okay as the carb count is 2g per half spoon. I reckon one whole spoon would be enough to take the edge off the tartness of the rhubarb. Any advice if this would be okay for type 2 diabetic.

Rhubarb is the one time I use sweetener and or sugar. I don't think I have used either since last spring.... on my stewed rhubarb.
I am not sure what the Half Spoon sugar is but I am guessing probably half and half sugar and sweetener. It's your decision. I am a bit compromised on sweeteners. I am not convinced that they are a healthy alternative for us, they don't taste nearly as good as any of the regular sugar options ie sugar honey syrup etc and most have a weird aftertaste. Of course I am somewhat fortunate in that I can inject insulin to cover sugar but I try not to use it.... but rhubarb needs it, so I am always a bit compromised. I think it has to come down to a personal decision based on your tastes.... some people don't seem to mind the taste of sweeteners..... how well managed your diabetes is and can you therefore afford that small sugar intake...... and will it create a slippery slope where one spoon leads to 2 and then 3.... this is my problem. 🙄

I was just inspecting my rhubarb patch today and thinking that I might get my first picking in a day or 2 and so I am pondering this conundrum myself, but still not come to a decision. .

Half Spoon is definitely better than using sugar and is OK on rhubarb. I bought some erythritol to use in cooking but hadn't realised it's laxative effect if you use too much. I have since read some bad things about it so I am only using a bit and will probably not buy anymore.
The Canderel website has a good guide to their range od sweeteners and what they are suitable for but it all comes down to taste.
Since cutting down on sweet things I probably have my rhubarb less sweet than I used to.
Sorry @rebrascora about the fourth pick of rhubarb today.

Erythritol doesn't have a laxitive effect for me. I think some of the other sugar alcohols are worse

Yes, I am well aware that I am well behind others in the country with my rhubarb but I am trying to convince myself that I will still be harvesting at the back end of the summer when the rest of you have run dry or gone to seed. I was inspecting my neighbour's patch the other day and he is very much in the same boat as me (but then his are transplants from my root stock after the ones he bought died). He was trying to wind me up by saying that they had already had 2 pickings off it, but it was all lies!
