Had a cooking day, couple of new recipes, (for me)

Another meal for the memory bank - Low carb Mozzarella wraps.

Grate some Mozzarella cheese, put a thin layer in a pre heated frying pan, it will melt, but then sort of solidify, when it starts to solidify (and has a nice brown colour) flip it over, tricky, so be careful! When both side are brown, remove from frying pan and lay over a wooden spoon or something similar, so that the wrap takes a sort of Taco shape, as it cools it will harden up.
While they are cooling, prepare whatever filling you want to put in them. You can pretty much use any filling you wnat, hot, cold, etc. I think once cooled they will probably keep for while?

On this occasion I simply fried some beef and pork mince, added tomato puree, garlic powder, onion powder, finely chopped bell pepper and finely chopped choritzo. You could do chicken, salmon, omelette, onions, chillies, peppers, salad, veg, broccoli, cabbage, etc, etc. The World is, as they say, your Oyster, ooh yeah you could add Oysters! Lol.... 😎
I tend to use a small frying pan, about 8-9" dia, and I do one wrap at a time.
On this occasion I did two, and was stuffed at the end, so one per person is probably enough!

Also beware of adding too much cheese, you want a nice even thin layer, as this was my first attempt, they were actually a tiny bit too thick, so next time I will add less cheese to the pan.

Very tasty though, the wraps are zero carb but obviously quite fatty, so not something I'd eat every day.

Another new recipe for me, Apple and Oat cakes:
Pre heat oven to 180C.
Mix 1cup oatmeal (Edit: I used 100% rolled oats) with 150ml warm milk, let it soak up all the milk.
Finely chop 2 apples, then fry (or microwave or air fry) with nob of butter, and tsp of vanilla essence, until soft, then finely chop again (or use food processor) until almost mushy.
Mix in two eggs to the apple mix. Add and mix in the milk soaked oats. Add 1 tssp sweetener. Add cinnamon to taste, eg: ½ tsp. Add seeds, eg: pumpkin, chia, etc, (optional)
Chop 40g nuts, eg: almonds, pecan, walnuts, (optional) and add to the mix. Pour into oiled cupcake tray or use paper cupcake cases.
Cook at 180C for 30 mins. Allow to cool before eating.

Can't remember where I got it from, think it was a YT video, but it was low carb and low sugar, I think about 10g carbs and about 70cals per cake? Very tasty.... cheers

Any ideas for using some coconut flour?
It is my week to cook again and I have used the eggy things a lot now.
I know that this place is an excellent source of inspiration.

Have you done the microwave mug cake? That uses coconut flour?

Go on the sugarfreelondoner website and in the search bit type coconut flour. You will find lots of recipes sweet and savoury.
