Another meal for the memory bank - Low carb Mozzarella wraps.
Grate some Mozzarella cheese, put a thin layer in a pre heated frying pan, it will melt, but then sort of solidify, when it starts to solidify (and has a nice brown colour) flip it over, tricky, so be careful! When both side are brown, remove from frying pan and lay over a wooden spoon or something similar, so that the wrap takes a sort of Taco shape, as it cools it will harden up.
While they are cooling, prepare whatever filling you want to put in them. You can pretty much use any filling you wnat, hot, cold, etc. I think once cooled they will probably keep for while?
On this occasion I simply fried some beef and pork mince, added tomato puree, garlic powder, onion powder, finely chopped bell pepper and finely chopped choritzo. You could do chicken, salmon, omelette, onions, chillies, peppers, salad, veg, broccoli, cabbage, etc, etc. The World is, as they say, your Oyster, ooh yeah you could add Oysters! Lol.... 😎
I tend to use a small frying pan, about 8-9" dia, and I do one wrap at a time.
On this occasion I did two, and was stuffed at the end, so one per person is probably enough!
Also beware of adding too much cheese, you want a nice even thin layer, as this was my first attempt, they were actually a tiny bit too thick, so next time I will add less cheese to the pan.
Very tasty though, the wraps are zero carb but obviously quite fatty, so not something I'd eat every day.
