Had a cooking day, couple of new recipes, (for me)

So done a bit of cooking today.
A new egg bite/muffin recipe: (Salmon and Prawn).
5 eggs, couple scoops of Greek joghurt, grated parmesan cheese, chives, spring onion, red pepper, onion powder, pepper, chopped prawns, chopped smoked salmon, all mixed together.
Pre heat oven to 190/200C.
Evenly pour mix into ramekins/ baking tray.
Add smidge of grated cheddar on top. Bake for 13-15 mins.
Came out ok....

Then tried one of Sugar Free Londoners cookie recipes, (Peanut butter Keto).
250g crunchy peanut butter, 50g of sugar substitute (Xylitol), NB: recipes says 100g, but I only used half and it was still very sweet, so maybe next time would only use 25g. 1 egg beaten, a large dash of cinnamon (1/2 teaspoon) , a dash of rock salt, mix together in a bowl.
Preheat oven to 180C
Roll into small balls and place on a baking sheet with baking paper. I used a spoon and "splodged" it onto the baking paper, so not very neat, not very round and not very thin. Next time I maybe would try to make them a bit neater and a bit thinner.
Bake in the oven for 8-10 mins. I did mine for 12min as they were a bit thicker. They are very soft when you first remove from oven, but they do harden up as they cool down. Very tasty!

Your savoury muffin recipes sounds lovely.
I also did the peanut butter cookies last week, lovely with a cup of coffee.
 
I've made those cookies a few times, the coconut flour ones are nice too.
 
And my innards reckon that artificial sweeteners taste 3 times as sweet as the real sugar equivalent so if its granulated sweetener 1 teaspoon = 3 teasponfuls.

Yep, its very sweet. I made some more cookies yesterday and only used half again, so about 1/2 a teaspoon, for the whole mix and it was just right, bearing in mind the peanut mix is sweet anyway, even though its unsweetened, IYSWIM.

And I am the other way in that most of them hardly taste sweet at all to me and most have an unpleasant aftertaste so generally I am not tempted to bake with sweeteners. I have a cupboard full of different ones that I have tried and not bothered with again. I must have about 10 of them, before I gave up on the idea.

I made some of the coconut cookies today. I just roll the mixture into little balls and squash them down on the baking tray.

I made the sugar free londoner almond biscuits today, expecting some nice almond biscuits, but erm, no!
Did not realise that this was an American recipe, and when they say "biscuits" they basically mean scone or bread, Doh!
So i ended up with a few sort of flat savoury bread discs.....
Must pay more attention to recipes next time?
 
Yes I wish they were a bit crunchier, but I'm not sure if it's possible without sugar.
 
I made the low carb shortbread ones and they are lovely. I use Erythmirol as the sweetner but I am not overly keen on it for no other reason than its artificial. I have just bought some Wheat Gluten flour which is the flour with everything taken out bar the gluten. I might try that next rather than using the Erythritol.

I find if I use almond flour/ground almonds you don't really need the erythritol as it is quite a sweet taste anyway. I don't think the gluten would be a substitute for a sweetener.
 
Made some Keto Muffins today, think I got the recipe from The Sugar Free Londoner, but not 100% sure TBH, very nice though.....Supposed to make 12 ,but I managed to squeeze 14 out of the mix.... 😎

Recipe: - Keto Muffins:
Pre heat oven to 180C.
¼ cup almonds, finely chop or blend, toast / fry until brown.
Mix ¼ cup peanut butter+1tbsp butter+2tbsp coconut oil, microwave for 30sec to soften.
Mix 2/3 cup almond flour+2 tbsp sweetener+1tbsp cinnamon+1/2tbsp salt+1/4tbsp nutmeg and mix.
Add 6 eggs+1tsp vanilla and mix. Add ¼ cup Greek yoghurt and mix.
Add peanut butter, butter and coconut oil to the mix. Add a few of the toasted almonds to the mix.
Fill 12 cupcakes with the resulting batter mix.
Add a few of the toasted almonds to the top.
Bake at 180C for 20/25 mins.
NB: use cupcake cases or oil the cupcake tray to stop them sticking.
