Had a cooking day, couple of new recipes, (for me)

So done a bit of cooking today.
A new egg bite/muffin recipe: (Salmon and Prawn).
5 eggs, couple scoops of Greek joghurt, grated parmesan cheese, chives, spring onion, red pepper, onion powder, pepper, chopped prawns, chopped smoked salmon, all mixed together.
Pre heat oven to 190/200C.
Evenly pour mix into ramekins/ baking tray.
Add smidge of grated cheddar on top. Bake for 13-15 mins.
Came out ok....

Then tried one of Sugar Free Londoners cookie recipes, (Peanut butter Keto).
250g crunchy peanut butter, 50g of sugar substitute (Xylitol), NB: recipes says 100g, but I only used half and it was still very sweet, so maybe next time would only use 25g. 1 egg beaten, a large dash of cinnamon (1/2 teaspoon) , a dash of rock salt, mix together in a bowl.
Preheat oven to 180C
Roll into small balls and place on a baking sheet with baking paper. I used a spoon and "splodged" it onto the baking paper, so not very neat, not very round and not very thin. Next time I maybe would try to make them a bit neater and a bit thinner.
Bake in the oven for 8-10 mins. I did mine for 12min as they were a bit thicker. They are very soft when you first remove from oven, but they do harden up as they cool down. Very tasty!

Your savoury muffin recipes sounds lovely.
I also did the peanut butter cookies last week, lovely with a cup of coffee.
 
I've made those cookies a few times, the coconut flour ones are nice too.
