It is my week to cook so no excuses!!
Risotto with a very carefully timed delivery of insulin to avoid the spike followed by a sensible walk of 45 min after our evening meal. All a recipe for perfect Libre profile.
BUT. Why o why do they not give the carbs for the dried weight of rice. With a 10.5 at bedtime I wondered what on earth was giong on. So I had taken the CHO from the 100 g as dried weight, not as the cooked. However once it is cooked and mixed with everything else, what is the point of weighing it then.
So I had used three times what we needed and it is no surprise that we did not manage to eat it all. The recipe suggested even more than I did, ut perhaps Nigel Slater has a big appetite. OH did think it was quite a lot, but as I am a bit of a beginniner with all this cooking he did not like to say anything!!! Lesson learnt and correction delivered.
