Hey all 🙂

Any of you who make these, what's your preferred recipes? Also, how do you cook them?

I had one of these on holiday a while ago which was bacon, cheddar, feta and spinich and it blew my mind! They seem really easy, but I'm interested to know what people like.
 
Fry contents - your choice - in frying pan, add beaten egg, cook until bottom set, cook top under grill. Also known as a Spanish omelette.
 
For me a Spanish Omelette would be one with potatoe as well as other filling.
 
Yes - perhaps I should have said "similar to".

Traditional recipes differ, but basic idea the same, I just use what I have/fancy, not too bothered about what I call it!

Im not quite sure how they differ to ‘crustless quiches’
 
Have one quite often. No fixed recipe, whatever's about. Usually add some decent sausage chopped up into the mix and throw in some mushrooms and a green pepper. Tend to leave those until the end so they still have some bite. The grilling is essential because it puffs the egg and cheese mix up. Cook in a small cast iron pan and eat it straight from the pan, that way you get all the crunch bits off the bottom. Lovely.

PS. In my world, a quiche has to have an egg and cream filling which is baked to set it. Different end product.
 
Docb is 100% correct in his final sentence.

In a normal family sized frying pan though - you need an awful lot of beaten egg. If you happen to have a smaller one, use that instead if you don't happen to have well over half a dozen eggs to hand!

If you are going to incorporate spinach, it needs hardly any cooking itself, I would chuck it in the pan with the virtually 100% cooked 'other' filling ingredients and just give a few secs to 'wilt' immediately before adding the eggs. I fully expect the feta to be much the same as spinach - virtually no cooking before the egg.

Bacon bits chopped red onion and chopped red and green peppers, here.

So you're putting the egg over the cooked ingredients in the frying pan, cooking the egg and then finishing under the grill. Pretty straightforward! Need to get a pan I can put under the grill.
 
I generally have corned beef and mushroom these days, in the past they have included (not all at the same time I hasten to add) cheese & onion/leek, prawns, bacon, wiejska, salami, peas amongst other things xx
 
What is wiejska?
a type of Polish sausage, I used to get mine from Aldi but they stopped selling the one I bought, think Lidl sell a variation as well xx

I use a small two handled cast iron jobbie - looks like Le Creuset but I bought it in Sainsburys at a fraction of the Le Creuset price. Works a treat.

PS tried to put up a picture but failed.

I may give it a try if I see any but I don't shop in Lidl since they stopped selling the Protien Rolls.

I'm there every fortnight for a stock on Salami and that and my grandad's there once or twice a week for chicken, potatoes etc, its the cheapest place in our town as only other bigger shop we have is a Co-Op which are extortionate xx

Lidl here is across the city the other side to me across very busy roundabout. Agree that Co-op can be expensive.
