Only thing I'd add is to remind you that flights to Israel (especially on El Al ariline) have even more security checks than most flights, so be prepared for long queues for questioning by security staff, as well as usual checks on baggage and bodies etc.
I think the time difference between UK and Israel is 2 hours, so you'll need to check and allow for that. Basically, expect blood glucose levels to be a bit off target for at least 24 hours after a flight across time zones, plus there will be a significant difference in temperature, humidity etc, especially at this time of year. But, once you get there, food like humous, felafel, salads, yogurt / lebaneh, pitta bread etc is great! Don't limit yourself to tourist foods in resorts like Eilat. 🙂
