First egg bites/muffins success! 8-)

As I am on the food re-introduction part of the T2D Pathway to remission, I am looking at new things to eat.
I have seen loads of vids on the "egg bites" or "egg muffins", so thought I'd give them a try.

Had a look in the fridge and have a few bits left over from couple of days ago, eg: cooked ham and chicken.
I pre heated the oven to 180C.

So 6 eggs in a large bowl, mixed/whisked and seasoned.
Cut the ham and chicken into very small chunks and into the eggs.
Also cut up a couple of cherry tomatoes, half a yellow bell pepper, a spring onion and one roast potato (my Wife's!)
Grated some mature cheddar cheese. Threw everything in with the eggs and mixed well.
A small spray of olive oil onto the 12 cupcake type silicone baking tray to stop them sticking.
Spooned the egg mix carefully into each cupcake recess. Added a few grated bits of cheese on top.
Baking tray into the oven and kept an eye on them whilst I made a salad. Most recipes say anything from 12 to 18 minutes.

Lettuce (little gem), large tomato, couple of spring onions, one finger of celery, the other half of the yellow bell pepper, some sliced cucumber, all cut into large chunks and salad dressing added (small amount only) and mixed.
By the time the salad was made (about 13 minutes) the egg bites were just firm with no runny bits of egg.
6 eggs made 12 cupcake sized egg bites, so we had a couple each with our salad for dinner and still have some left for tomorrow as I understand they will keep well in the fridge.

And very nice they were too, so I would highly recommend making them if you have not tried them yet.
The ingredients can be changes to suit whatever you like or have handy in the fridge.
I am going to try salmon and broccoli next and also chorizo and mushroom and also bacon and mushroom too.

Sounds like a good Friday Fridge meal. Mine is usually a frittata, but I like the idea of making individual muffins. I nearly thre out the muffin tin but it will now have a reprieve. Thank you.

If you want a slightly fluffier texture separate the eggs and whisk the whites to meringue consistency. Add fillings to beaten egg yolks and gently fold in the egg white mix. Works best with fairly light fillings in small pieces.
 
The great thing about the egg muffins is that you can make a batch one day and heat them in the microwave for the next few days. I sometimes have them for breakfast - make enough one morning for next couple of days.
They can also be eaten cold when "on the run".
 
Yep, I did 12 and they lasted us three days, hot and cold. Am doing some more tonight, as we went shopping yesterday so have a fair few ingredients in, so will be trying some new recipes.... 😎
 
Glad they worked out for you. I tried Michael Moseley's low carb mince pies at Christmas. They fell to bits (this has happened twice now, not sure why as follow the recipe and instructions properly).🙂. Our guests had some and really enjoyed them. I put them as a "mince pie pudding" after admitting what had happened:rofl:
 
Did another batch of 12 egg bites/muffins last night.
This time to get 12 muffins I did the following:
6 eggs beaten and added 1/4 cup of grated parmisan cheese, 2 table spoons greek yoghurt, a couple of chopped spring onions and some pepper.
I chopped into small pieces and pre cooked some bacon, chorizo, onion, green beans and button mushrooms.
I then combined all the ingredients, sprayed a 12 cupcake size baking tray, and poured into each segment. I then sprinkled some grated cheddar on top. The oven was pre heated 170F.
I placed the baking tray in the oven for 12 minutes and the egg bites were nicely set.
These were more savoury than my last ones, less eggy.
You could add milk, or cream, or creme fresh instead of the greek yoghurt if you wanted to,
Am really liking these.... 🙂

Most of the YT clips I have seen mention that they can be frozen, yes. Only thing to mention is they tend to stick together as they are soft, so you may want to individually wrap them when freezing.
I had a couple for breakfast this morning, and just microwaved them for just over a minute and they were hot and tasted great. Very savoury. They also taste great cold BTW. Cheers
