Just wondering what people eat as a bed time snack if anything?

I have not been having any snack but I read that something like crackers and cheese would help stabilise the levels and the liver would reduce the glucose release during the night because of the snack.

on insulin you shouldn't really snack on anything with carbs unless your too low to go to bed, if above safe to go to bed without anything then a small piece of cheese should be enough but you wouldn't want to be doing it if high as it could keep you there, as always everyone is different and reacts differently so you'd have to experiment and see what way you reacted, like if I'm below 6 I'll have a biscuit (without insulin obviously) above 6 I'm generally safe and wouldn't even take protein on board BUT if I've had a more active day I'll take a biscuit for anything up to 6.5-7 xx
 
Not heard that before, never eat late at night and sleep better for it, you have to give your digestive system a break, so a fast from evening meal to brekkie is a good time to do this, my view only.

You could just try eating the cheese and see how it goes, unless you need the carbs for insulin balance.
 
An hour or so before going to bed, I enjoy a strong cup of coffee with cream ( yes, I know, but it really doesn’t keep me awake. ) As an extra treat, I sometimes have a homemade, low carb, sugar-free cookie made with a mixture of almond flour, fibre flour, coconut flour, egg and peanut butter and Erythritol.

I just saw fibreflour recently @Browser in both superfine and normal varieties & notice it’s not so Hugh in fat as coconut flour or almond. Can I bake 1 on 1 replacement or is it supposed to be a partial replacement?
 
I haven’t tried it as a 1 on 1 replacement but I think it’s worth a go. As I said, I mix it with almond and coconut flours because it suits what I am making - cookies and banana loaf. I think it might work reasonably well in other baking recipes although I don’t know what it’s rising potential is. It might be worth googling it to find out a bit more of it’s applications. I should imagine that the superfine stuff might be the most adaptable.
