I tried this ~ easy to follow instructions. I seasoned with black pepper ~ mixed herbs and a little salt. Turned out alright😛

Just seen this. Made a random carrot, celery, onion soup yesterday. By random I mean I threw in what I had rather than quantities from a recipe. What might interest any other random soup makers is that I found a lump of fresh ginger and a chilli in the fridge so they got chopped up and went in as well. Stewed it until everything was soft and blitzed it up. The final gingery veggie concoction with a bit of chilli hit turned out rather well, even if I say so myself. Give it a go!
 
I'm with you @Docb. I not one for following recipes. I like bodge soups. Another interesting ingredient to use is orange zest if you have any old oranges lying about... lemon probably works too but not tried it. It goes particularly well with carrots and poultry... turkey in particular. May make some soup this afternoon as I have loads of celery and onions and carrots (don't tell the horses).... just no chicken carcass..... one of my surplus cockerels may find himself on the menu! 😳
 
Ah, also boned a chicken which gave me a carcass to make some stock with. The chicken stock also went in the soup.

The chicken got filled with herbs, chopped shallot and sliced mushrooms and roasted.
