DIY chocolate digestives

I’m watching a programme called The Factory about MacVities biscuit factory. Instant nostalgia for chocolate digestives which are now miles off limits for me. Sudden inspiration !!! I’ve recently made batches of ‘biscuits’ using combinations of almond flour, coconut flour, fibre flour, peanut butter, sugar substitute, orange zest and juice. These biscuits are pretty edible on their own and kind to my BG, but I realised that my occasional treat of very dark chocolate ( usually Aldi’s Moser Roth 85% cocoa ) could enhance their monotony. I melted a pack of chocolate and dipped the ‘biscuits) in the molten mixture ......... hey presto, DIY Chocolate Digestives. They’re in the fridge at the moment, waiting for the chocolate to solidify but they look delicious and, while I haven’t tested their ‘damage level’, I’m pretty sure they will be fine for me. Can’t wait to try them.

oh they do sound good! That 85% Moser Roth is delicious, I'm having a bar after my tea tonight lol, only 3 nights a week I eat it so not too bad 🙄 xx
 
Delighted to report back that the chocolate biscuits were lovely and fairly innocuous in terms of BG levels.

As far as the biscuits are concerned, I’ve used various recipes found online, but tweeked them by substituting ordinary flour with almond flour, coconut flour or fibreflour or mixtures of them ( I sometimes add some chopped nuts to the biscuit mixture ). I use Erythritol or Xylitol instead of sugar (expensive but worth it). There are lots of peanut butter and orange cookie recipes, so find one that suits you. When the biscuits have cooled, melt the chocolate ( as high a percentage of cocoa as possibles ) in a dish above boiling water and dip one side of the biscuit into the molten chocolate. Put them on a tray ( non chocolate side down ) and leave to cool completely.
I’m sorry I don’t have a specific recipe for the biscuits but I tend to experiment with what I find online.

Spread between a dozen or so biscuits, I don't think the carb content of a few tablespoons of peanut butter is significant. But if it doesn’t sit comfortably with you, just omit it.
