Hi all just had to tell you all about my lovely dinner.i was diagnosed on Wednesday and still trying to come to terms with it. Not sure what I can eat so experimenting with veggies etc. I had a very medium rare steak with stir fried veggies. The veggies consisted of sliced red onion and red pepper, fine green beans, courgettes cut into ribbons with my potato peeler, grated carrot and bean sprouts all stir fried in low cal spray oil, soya sauce and garlic. Very, very lovely and the good thing was my husband and daughter had this for dinner too, not making me feel the odd one out.

I have been a cook and have books of recipes, sadly all recipes that I can't have any more. I make the most amazing Christmas cakes and Scottish tablet, both of which I get frequent requests to make. So I am hopefully going to pick up some good recipes on here too. :D
 
Your dinner sounds delicious! 🙂 Recipes can be adapted - there's not much we can't have, it just needs a little thought and ingenuity sometimes. Moderation is the key - consider it a challenge! 🙂
 
You'd be surprised how many recipes can be tweaked to significantly lower their carb and fat content. Cakes and puddings are a bit problematic, but most savoury recipes can be adapted. I made a lovely shepherds pie this evening, with low fat mince, diced carrot and courgette, with a tiny bit of gravy stirred in. I topped it with cauliflower (mashed with a teaspoon of real butter) instead of potato, and then an ounce of grated low fat cheddar.
 
Cauliflower rice

So LeeLee what's the cauliflower rice all about? I can't seem to get that recipe. I love rice but understand its one of the things I can't have.

My Scottish tablet is made with a tin of condensed milk and 2lbs sugar. It's ver nice and everyone who ever tried it raves. My local shop wants me to make enough for them to sell. How sad that I can't have it ever again. 😡
 
Northerner it was really lovely and the important thing for me was hubby and my daughter (who's very fussy) had it too and both said it was lovely. My hubby in fact said it was a triumph. So proud of myself for thinking it up but proud of them for loving it and not making me feel I am on my own.

To make cauli rice, blitz from raw until sort of the consistency of rice, then stir-fry (I use Fry-Light to keep the calories down). The mash on top of my shepherds pie was just boiled cauli mashed with a measured teaspoon of butter.

As for not having something you love ever again, wot rot! Once you have your BG under control, you will be able to allow yourself a little bit of what you fancy and know the effect on your body. You may find that your taste gradually changes and you become less fond of the really sweet stuff. I never thought I'd ever say that about myself, but I made cupcakes with my granddaughter yesterday and she left about a quarter of one. That was enough for me... I couldn't believe it!
 
I don't think anyone's blood sugar could take much tablet. Even my non diabetic friends at work joke if you eat enough of my tablet you coul put yourself in a coma without being diabetic!!!! Nice to know they all enjoy it so much but I guess I am limited to one wee square of it now.
 
Have to say I've never tried tablet though I understand it's very like fudge. Except sugar-ier rather than sweeter?

I have always adored fudge. Clotted cream fudge .......

But now 2 squares is more than enough - that's approx 2" x 1" x1".

Yes I could eat more, and then I'd feel sick - cos I have and I did .... :D
 
Have to say Trophywench, it's like fudge but sooooo much nicer and sweeter. Wish I could send you some....but no....too sweet. Next time I make it I will only have 1 piece and cry!!!!! Ha ha ha ha ha :D
