Good morning everyone.
Pleased to meet you all. I have been recently diagnosed with type 2 and though 'okay, got this sussed, I can sort this diet'!! 4 weeks down the line those of you who are more experienced in this lifestyle will appreciate it's not quite so simple!
Having read a large amount of books and online material I decided the most suitable way forward for me was a low carb diet. Although having lost my sense of taste & smell a couple of years ago I was becoming quite miserable with the grim offerings. Not to be defeated I decided to visit the supermarket and see what I could come up with. Goodness me, all those sauces and spice toppings which have so much sugar and even high carb levels! It took around 2 hours of reading ingredient lists but in the end I left with a comprehensive batch of herbs and spices.
My partner Richard died a few years ago and since then I have been very poor at cooking Nutritious meals for myself, which is possibly why I am now type 2. So I am about to embark on this road of cooking meals- perhaps even batch cooking and using the freezer for meals rather than tasty goodies.
I have been through the cupboards and freezer etc removing anything which might entice me to deviate from the healthiest route and gave it all to friends when I was diagnosed. This seemed like a sensible act but over the past few evenings of checking out the cupboards I find myself thinking "who's idea was that?!
