And has anyone used almond flour to bake with rather than Normal white flour?

@NotWorriedAtAll and @ColinUK are our most famous resident low carb bakers so they may be able to suggest a few things when they are around and have time to do so (sorry C!) xx

I‘ve made banana and walnut cake using ground almonds instead of flour and substituting the sugar with sweetener. Really easy and tasty as it’s just made in one bowl and poured into a baking tin. Only works out about 4 grams of carb per slice. Easiest way to start is watching them make it on YouTube. Just type in low carb banana cake/bread and you can watch it step by step. There’s loads of low carb recipes on there and I find ground almonds to be an excellent substitute (can be used instead of almond flour).

This is one I made. It’s not as well done as it looks and was lovely buttered 🙂

I have just eaten this for dessert tonight. Keto Chocolate Mousse Tart. Base -Almond flour, ( about 1&1/2 cups) melted butter, sweetener (if desired). Topping- Heat coconut milk (1/2 tin) gently and add 3 or 4 squares 90per cent dark chocolate, whisk well and add few drops vanilla essence. Pour over base and chill in fridge.
 
I occasionally make mug cake in the microwave with a mixture of ground almonds and coconut flour, an egg, and baking powder and artificial sweetener and then use the resulting cake in a low carb trifle with sugar free jelly and berries and cream. I haven't found time to try baking a proper low carb cake or brownies yet, but the mug cake in the microwave works fine. You can add cocoa and a dollop of peanut butter or lemon zest and then make a syrup with the lemon juice and sweetener to drizzle over it.
I am very conscious of the environmental impact of almond production though, so I limit my use of almonds to special occasions only.
 
I use ground almonds, almond milk, almonds - I don't use almond flour because it is usually overly processed for my purposes. I buy brands of almond products that are fair trade, organic and environmentally friendly - my main concern is about whether they are specifically bee-friendly and that means spending a bit more for the product and ensuring it comes from European producers - usually Spain. Happily the almond milk I buy can be bought from Tesco and isn't the most expensive brand and is made with European grown almonds.

I also use coconut flour, oat fibre and when making bread I use vital wheat gluten and yeast.

If you do a search on the forum for 'keto' and my name you should turn up a good few recipes for the sort of thing you are looking for. If you are on Facebook I have a page - linked below in my signature - which has lots of keto (that means very low carb) desserts and cakes and baking recipes. There is also a group on Facebook called Easy Keto and Low Carb and that has loads and loads of recipes from a community of people who are in the main doing keto to lose weight but all the same has lots of useful information and recipes. I learn a lot from there every time I pop in.
 
Just made some chips using just Almond flour & Xanthan Gum fried in good olive oil, bit of pink salt and they were not bad.

That looks really nice. Love bananas but never tried banana bread. Which is shocking as I've read everyone made banana bread in lockdown. Will definitely try this. Thank you.

The mug cake sounds like my cup of tea. I have a terrible sweet tooth so hoping it will stop me yearning for a chocolate bar lol

I have just purchased The 30 minutes Diabetes Cookbook. 100 low carb recipes. This has loads in. Search Katie & Giancarlo Caldesi on internet and their low carb recipes. They use almond flour in their recipes.

I have their Diabetes Weight loss Cook Book which has some very good recipes in, not too complicated either.

We have recently discovered frozen oven chips. We end up having about eight each, but oooooo they are so worth it. We stick to our carb target but enjoy these so much more because it is a rarity. We had ham egg and chips and I was still below my 30g Carb target and enjoyed every mouthful.

How much butter for this? It sounds delicious

You can't wash the fat when it's oil not lard. Yukkity Yuk Yuk.
 
I sometimes use Ultrafine Fiberflour and ordinary Fiberflour for baking. Ordinary for bread, rolls and pizza bases and Ultrafine for pancakes, crepes and brioche type burger buns. It’s supplied by Lonjevity, sometimes Amazon has it but it’s quite expensive and I use it selectively.

We've been using them for years too, and they don't spike too much if it's now and again.

Actually, though, lately we've been buying a swede to chop up and roast in place of chips - we have fish on Fridays (I can't face oily fish more than once a week, I'm afraid, and yes I know it's good for me) and have been having things like salmon fillets or sea bass with fennel/rosemary/tomatoes/olives, green veg and swede 'chips'.
