Relationship to Diabetes
At risk of diabetes
I have been recently diagnosed. Have a weakness for cheesecake. What are my options any suggestions . ....
 
Make the cheesecake filling using sweetener instead of sugar - or mix it with a s/f lemon jelly made with a lot less water, and don't put a base on it!

Or if you only do 'easy' stuff, a dollop of full fat Greek yoghurt and a handful of frozen berries blitzed quickly in the microwave to defrost. Or a dollop of thick double cream or small amount of pouring cream over the berries.

Or make a cake using ground almonds rather than flour and sweetener.
 
I tried this recipe today with a little trepidation and little expectation. https://www.all4women.co.za/food-home/recipes/recipe-items/low-carb-creme-brulee-recipe Two hours after my meal of braised steak and veg, including two smallish potatoes cooked in the same pot, followed by a ramekin of this creme brûlée, I went from 5.5 to 6.6. Maybe due to my now limited consumption of desserts, I found it delicious and surprisingly unharmful to my BG. After ‘googling’ for advice, I wrapped the remaining five ramekins, individually, in cling film and foil and put them into the freezer for future enjoyment.
 
I recently came across fiberflour, which, apparently, is a very good low carb substitute for white flour. I bought some from Amazon ( not cheap ), haven’t used any yet but am looking to making desserts etc. with this a substitute for almond flour and coconut flour. Has anyone tried it?
