I know we always say beware of prepared sauces but I have come across some low carb, vegan, gluten, nut and dairy free curry sauces. They vary a bit in carb content but are from less than 20g per 350g jar to less than 40g per jar which says it serves 4.
I bought from COSTCO and some are on Amazon or the company website punjaban.co.uk where there are also some recipes.
 
I find that some ready made curry sauces ( from Aldi ) are low enough in carbs for me (when eaten with cauli rice), though sadly some are not. I always check the carb content on the jar.
