Hi I use the following as a general base for all curry type sauces / dishes
4 or 6 curry leaves
1/2 teaspoon onion and mustard seeds
1 teaspoon ground coriander seed
1 teaspoon chilli powder
salt
1 teaspoon ground cumin
1 teaspoon garlic
1 teaspoon ginger pulp
2 medium onions
coconut milk or can of chopped tomatoes
I also keep in curry / tikka paste to mix with mayonnaise to produce dips
fry onions the onions until translucent
add all other dry ingredients fry for a couple of minutes
add coconut milk or tomatoes?
