I have a recipe for a curry which has yoghurt as an ingredient but doesn't say when it should be added. Is there anybody who may have made a curry using this ingredient and can help me with this?
 
You have to be careful or it will curdle.

I usually cook everything, take the pan off the heat and let it cool down a bit, add the yoghurt slowly stirring well and then simmer the curry for a few minutes.

Don't know if everyone does this but it is trial and error. I have heard of people mixing cornflour with the yoghurt to stop it curdling?
 
Youn might not have to mix it into the curry, but serve it alongside, so you can alternate mouthfuls of hot curry with cool yoghurt.
 
I do the same as cherry, it seems to work well.
 
You should decide what kind of curry you want to make! Korma marinades the meat in yogurt and spices and then stir fries them (yogurt and all). Or you can cook the meat and then add the yogurt at the end. Just do a google search for yogurt curry, you'll find lots of recipes.
 
The only problem we've had with it curdling is adding the cold yoghurt in while the curry was still too hot. As Toby says it often goes in at the end, but might be worth waiting till it's been off the heat for a few minutes.
